Lentil minestrone recipe from New York Times. NYT version calls for parsley and thyme sprigs. Recipe calls for adding a parmesan cheese rind for flavor. That is approximated in the ingredients list as 1 tablespoon of parmesan cheese.

Recipe Ingredients for Lentil Minestrone

1 lb lentils
7 oz carrot
7 oz onion
4 cloves garlic
2 1/2 quart water
2 tablespoons olive oil
1 tablespoon parmesan cheese
1/2 lb swiss chard
14 ounces tomatoes del monte diced
1 teaspoon salt
1/2 cup macaroni

Recipe Directions for Lentil Minestrone

  1. saute onion and carrot in olive oil for 5 minutes

  2. add 2 minced garlic cloves, saute for one minute

  3. add tomatoes, allow to cook down for 5 minutes

  4. add water, parmesan cheese rind, 2 bay leaves, season with salt and add fresh ground pepper to taste

  5. simmer 30 minutes

  6. add swiss chard and 2 more minced garlic cloves, simmer an additional 15 minutes

  7. add macaroni, cook until done
