Imitation Meatloaf made out of lentils

Recipe Ingredients for Lentil Meatloaf

1 cup Lentils, Mature Seeds
1 serving Tomato, Basil
1 cup dry Old Fashioned Quaker Oats
1 medium (2-1/2" dia) Onions
2 large Egg, Whole
1 packet Soup, Onion Mix, Dehydrated, Dry Form
4 tbsp Ketchup

Recipe Directions for Lentil Meatloaf

Cook lentils in 2 cups of simmering water, covered, for 25-30 minutes, until soft and most of the water has evaporated. Drain and partially mash lentils. Partially cool. Add all other ingredients, aside from ketchup. Spoon into greased loaf pan and top with ketchup. Bake at 350 for 30-45 minutes until loaf top is dry and firm and golden brown. Allow to cool slightly (10 minutes) before serving.
