A mock version of meatloaf made with 100% vegetables.

Recipe Ingredients for Lentil "meat" loaf

1 gallon water
1/4 cup salt
8 cups lentils
5 lbs onions
7 1/2 cups oats
5 1/2 cups swiss cheese
7 eggs
1 quart marinara sauce
1/4 cup garlic, chopped
1/4 cup basil, dry
1/2 cp parsley
1 1/2 tbsp salt
1 tbspn black pepper

Recipe Directions for Lentil "meat" loaf

  1. Boil water, add lentils and cook for 25 minutes

  2. Remove from heat & Drain

  3. Mash the lentils lightly then cool for about 15 minutes

  4. Add the remaining ingredients and combine well

  5. place mixture in a well oiled loaf pan and bake at 350* for 40 to 45 minutes.

  6. Pull from oven and allow to cool for 15 miutes, slide a knife around the edges, invert and pop out of pan gently.
