A vegetarian meat-loaf-like dish.

Recipe Ingredients for Lentil loaf

1 cup dried lentils
4 cups water
1 onion, chopped
1 tsp garlic, minced
1 tbs olive oil
1/2 cup pecans, chopped
2 tbs whole wheat flour
2 eggs
1 tbs soy sauce
1/2 cup cracker crumbs
1 tsp thyme, dried
1/4 tsp italian seasoning

Recipe Directions for Lentil loaf

  1. Boil lentils in water until soft, then drain.

  2. Saute onion and garlic in oil.

  3. Mix all ingredients together and press into a greased loaf pan.

  4. Bake at 350 for 30 minutes, covered. Then uncover and bake for ~ 30 more minutes.
