Vegan lentil loaf packed with veg.

Recipe Ingredients for Lentil Loaf

1 cup red lentils
1/4 cup Shallots
15 Baby Carrots
1/2 Green Pepper
2 oz Tomato Paste
1 T Worcestershire Sauce
1 teaspoon sesame oil

Recipe Directions for Lentil Loaf

  1. # Cook lentils in 2 cups of water. Let in a bowl.

  2. # Chop each vegetable in a food processer/chopper separately, saute the vegetables to soften.

  3. Add vegetables to the lentils as you go.

  4. # Add tomato paste, Worcestershire sauce, salt and pepper, and any other seasonings you'd like. This can be taken in any direction- add ginger and braggs for an asian feel, tumeric or curry for indian, oregano and basil for italian.

  5. # Knead all together.

  6. # Shape into a loaf.

  7. # Bake at 350 for 40 minutes.

  8. # Let rest for 10 minutes.

  9. # Serve and eat!
