Modified from About.com recipe. The 1 C barley is 1 C cooked barley. Might add chopped mushrooms to add moisture. Can be a bit dry. Original recipe called for rice instead of barley and was double these measurements.

Recipe Ingredients for Lentil Loaf

3/4 c lentils
2 c water
1 onion, diced
1 carrot, diced
1 celery stalk, diced
1 clove garlic, minced
2 T olive oil
1 c barley, cooked
1/2 t salt
1/4 c ketchup or BBQ sauce
1/4 t sage
1/4 t oregano
1/4 t basil
1/4 t parsley
1 egg

Recipe Directions for Lentil Loaf

  1. In a large soup pot, simmer the lentils in water (or broth) until cooked. Drain and mash.

  2. Sautee until soft the onions, carrots, celery, garlic and add spices

  3. Combine vegetable saute with the lentils and barley and mash. (I used a food processor)

  4. Press mixture into greased loaf pan. Drizzle top with extra ketchup or BBQ sauce.

  5. Baked for 1 hour at 350.
