Recipe Ingredients for Lentil Loaf

1/2 cup sunflower seeds
1 tbsp. vegetable oil
1 carrot, peeled and grated
1 stalk celery, diced
1 cup mushrooms
2 cups lentils, cooked
1 cup oatmeal, uncooked
3/4 cup tomato juice
1 tbsp. flax seed
1/2 tsp. dried sage
1 tsp. dried basil
2 tbsp. nutritional yeast flakes
1 dash pepper
1 tsp. salt

Recipe Directions for Lentil Loaf

  1. Preaheat the oven to 350, spray a loaf pan

  2. Grind the sunflower and flax seeds into a coarse meal.

  3. Saute the vegetables. Add everything to a bowl, and adjust the tomato juice to how wet you want it.

  4. Press the mixture into a pan and bake for 45 minutes or until heated thoroughly. Let cool for 10 to 15 minutes, server.
