A tasty veggie comfort food. Feel free to use tomato paste instead of ketchup, veggie soup mix instead of onion, and add carrots, peppers, onions and garlic, or anything else you like, to increase veggie count!

Recipe Ingredients for Lentil Loaf

2 cups green lentils
150 g white bread (6 slices), torn into small pieces
3 eggs
1 cup vegetable broth
2 tablespoons ketchup
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 teaspoon dried parsley
1 packet dry onion soup mix

Recipe Directions for Lentil Loaf

  1. Preheat oven to 400 degrees F (205 degrees C). Grease a 9x5 inch loaf pan.

  2. In a large bowl, mix together 2 cups cooked lentils, bread, eggs, broth, tomato paste, basil, garlic powder, black pepper, parsley, and dry soup mix. Spread into prepared pan.

  3. Bake for 50 minutes. Let sit for 10 minutes before serving.
