Lower fat version of lentil loaf than the Holiday loaf. Can substitute cooked rice for the quinoa for about ten more calories per serving.

Recipe Ingredients for Lentil Loaf (PETA)

1 1/2 cups lentils, rinsed
3 1/2 cups water
2 small onions, diced
1/4 cup olive oil
2 cups quinoa, cooked
1 tsp garlic powder
1 tsp salt
1/4 cup ketchup
1 tsp sage
1/2 tsp marjoram

Recipe Directions for Lentil Loaf (PETA)

  1. ? Place the lentils and the water in a large pan and cook over medium heat until tender.

  2. ? Meanwhile, in a frying pan, cook the onions in the oil over medium-high heat.

  3. ? Partially mash the lentils and stir in the onions, rice, garlic powder, salt, ketchup, sage, and marjoram.

  4. ? Press into an oiled loaf pan and spread some ketchup on top.
