Recipe Ingredients for Lentil Loaf with mashed potato topping

1/2 cup lentils, rinsed
1 1/2 cups cooked basmati rice
2 cloves of garlic
2 1/2 cups of beef broth
3/4 teaspoon dried basil
3/4 teaspoon dried parsley
1 small onion, finely chopped
1 stalk celery
1 carrot
1/2 cup frozen peas
1 cup bread crumbs
1 tablespoon dijon mustard
4 potatoes(russett), cubed
4 cups water (or broth)
1/3 cup skim milk
1/2 teaspoon salt

Recipe Directions for Lentil Loaf with mashed potato topping

  1. Cook rice

  2. Combine lentils and broth, bring to a full boil. Reduce heat, cover and let simmer for 30 minutes. Add 3/4 tsp of salt and continue simmering for another 15 minutes or until all the liquid is absorbed.

  3. Saute onion, celery, carrot until onion is translucent. Add garlic and cook another 5 minutes.

  4. Combine vegetables, breadcrumbs, rice, lentils and seasonings in a 9x5x3 loaf pan lightly sprayed with non-stick spray.

  5. Add potatoes to boiling water. Reduce heat and cook until soft (15 minutes).

  6. Drain and mix with milk and salt.

  7. Spread potatoes on top of lentil loaf.

  8. Bake uncovered at 375 C for 30 minutes
