This is a modified version of the lentil pilaf I normally make, with lentils removed and brown rice doubled. This recipe is safe for those attemping to cleanse themselves of Candida.

Recipe Ingredients for Lentil-less Pilaf - Candida

2 cup Rice, Brown, Medium-grain, Cooked
6 medium (4-1/8" long) Onions, Spring Or Scallions
1/2 cup, diced Celery
1/4 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Kale
4 cups chicken stock, low sodium
2 tbsp Butter

Recipe Directions for Lentil-less Pilaf - Candida

  1. Melt butter in a 2-quart pot. Dice green onions and celery and saute in butter. Grate zuccini and finely chop kale in meantime. Add remaining ingredients and 4 Cups of water. Season with salt, pepper, ground mustard, and cayenne pepper. Bring to a boil, then simmer for 45-50 minutes, until rice is soft, and water is cook away.

  2. NOTE: it will help with digestion if you soak the rice overnight in water and a teaspoon of plain yogurt. I serve this with a dollop of plain yogurt on top, in place of sour cream. You can substitute unsalted chicken broth for the water for more flavor, and more nutrition.
