Lentil and Leek Pottage with Brown Rice

Recipe Ingredients for Lentil and Leek Pottage

95 grams Lentils
0.5 cup Rice, Brown, Medium-grain
2 clove Garlic
0.3 oz Extra Virgin Olive Oil
1.5 cup Leeks, (Bulb And Lower Leaf-portion)
0.5 tsp Salt
0.25 tsp Pepper, Black

Recipe Directions for Lentil and Leek Pottage

Cook leeks in heated oil 3-5 mins til soft. Stir in garlic and rice, saute 1-2 mins, or until rice looks opaque. Add water, salt, pepper, bring everything to a simmer quickly. Reduce heat to low, cover, and cook 10 mins. Rinse lentils with cold water and drain well. Add to pan after the 10 mins. Cook 20-25 mins or until the rice and lentils are tender and water is absorbed, adding water if necessary.
