Lentil Lasagna Recipe

Lighter, more fiber filled and healthier than regular :)

Recipe Ingredients for Lentil Lasagna

1 cup lentils, brown
2 cups water
4 tablespoon olive oil
1 large onion, sliced
1 clove garlic, pressed
2 cups tomato puree
1/2 cup sliced mushrooms
1/2 cup sliced zucchini
1/2 cup grated carrot
2 teaspoons dried oregano
240 g lasagna noodles, instant
500 g part skim ricotta cheese
4 cups 2% milk, 2 cups shredded 75% reduced fat sharp cheddar
1 teaspoon paprika

Recipe Directions for Lentil Lasagna

  1. Method:

  2. Cook lentils in water, covered, for 25 minutes or until water has been absorbed (or microwave, covered, on high for 12 minutes).

  3. Heat oil and gently cook onion until soft.

  4. Add garlic chives, sauce, vegetables and oregano.

  5. Bring to the boil and simmer for 15 minutes (or microwave on high for 10-12 minutes).

  6. Add lentils and stir well.

  7. In a greased shallow casserole dish, place one third of vegetable mixture.

  8. Top with a layer of noodles and one third of the ricotta.

  9. Repeat layers twice.

  10. Sprinkle with cheese and paprika.

  11. Bake in a moderate oven for 25 minutes
