Lentil & Kale Soup with Preserved Lemon

Recipe Ingredients for Lentil & Kale Soup

2 1/4 cups lentils
4 cloves garlic
2 tsp. olive oil
8 baby carrots
1 onion
5 1/2 cups stock
3 cups water
1 1/2 cups crushed tomatoes
4 cups kale
1 tsp. cumin

Recipe Directions for Lentil & Kale Soup

  1. Saute onion, garlic, and carrots in oil.

  2. Add 2 tsp. ras al-hanout, and .5-1 tsp. cumin, then lentils (half brown, half French), 8 cups water, approx. 2.5 cubes of veggie stock. Bring to boil then simmer covered, approx. 50 mins.

  3. Add chopped kale, 1 tsp. sherry vinegar, 1.5 tbps. chopped preserved lemon, and tomatoes. Simmer another 45 minutes.
