8 oz Lentils
3 large Egg, Whole
0.67 cup Milk, Nonfat, Fluid
1 cup Whole Wheat Flour
0.5 tsp Baking Powder
1 oz Cilantro
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 pepper Peppers, Jalapeno
11 oz Whole Kernel Sweet Corn
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
55 grams Onions
1 lime yields Lime Juice
0.5 oz Cilantro
0.5 pepper Peppers, Jalapeno
1 dash Salt, Table
1 serving Cooking Spray All Varieties

Recipe Directions for Lentil fritters with freshly made salsa

  1. Lentils boiled and drained. Cilantro chopped, spring onions sliced, jalapeno finely chopped, corn kernels drained. For the salsa: tomato finely chopped, cilantro chopped, onion and jalapeno finely chopped - all mixed with lime juice and dash of salt.

  2. Mix together drained lentils, corn, jalapeno peppers, spring onions and cilantro.

  3. In another bowl whisk together eggs, milk, flour and baking powder. Add the lentil mixture to form a pancake consistency batter,

  4. Spray a non-stick skillet with a cooking spray and add the batter using a table spoon, Fry for 1-2 minutes on each side until golden.

  5. Serve with freshly made salsa. Make about 16-20 fritters.
