Lentil Escarole Soup with Rice Penne

Recipe Ingredients for Lentil Escarole Soup

448 grams Lentils - Stop
0.5 tsp Sea Salt
4 serving Extra Virgin Olive Oil
430 grams Onions
1 package Rice Penne
335 grams Escarole

Recipe Directions for Lentil Escarole Soup

  1. - Pre-soak lentils for 24 hours

  2. - Start boiling Lentils in ample H20

  3. - Add salt

  4. - Chop and saute Onions in part of EVOO

  5. - Add Sauteed Onions to Lentils

  6. - Add in Rest of EVOO

  7. - Reduce heat and simmer until lentils are tender

  8. - Add Rice Penne, simmer for additional 5-7 minutes

  9. - Turn off heat and add chopped Escarole to wilt
