Recipe Ingredients for Lentil Enchiladas

3 1/2 cups salsa
1 1/4 cups lentils, boiled
1 1/4 cups cheddar cheese, grated
5 low carb tortillas

Recipe Directions for Lentil Enchiladas

  1. Place 1/2 cup cooked lentils into each tortilla.

  2. Top with 1/4 cup cheese.

  3. Roll up and place in casserole dish.

  4. Cover all with enchilada sauce.

  5. Bake: 350
