Recipe Ingredients for lentil eggplant soup

2 cups lentils
1 eggplant
1 onion
2 cloves garlic
3 tomatoes
12 cups water
2 tbsp beef broth
2 sweet potato
1 tbsp olive oil

Recipe Directions for lentil eggplant soup

bake diced eggplant and tomato at 350F for 30 min, meanwhile in large sauce pan sautee onion and garlic in olive oil, add water and broth, mix in lentils and chunks of potato, bring to boil and simmer for 45 min until potato soft, blend until smooth, add eggplant and tomato, add spices and herbs to taste
