Recipe Ingredients for Lentil dahl

2 liters chicken stock, sodium-free
1 onion
4 garlic cloves
1 leek
3 carrots
1 cup lentils
15 oz. pumpkin puree

Recipe Directions for Lentil dahl

  1. Dice onion and carrots and add to 1.25 L of chicken stock. Slice leek and add to pot with lentils. Stir and bring to a boil. Lower temperature and simmer for 20-30 mins.

  2. Add pumpkin and .5 L chicken stock. Simmer for another 10-15 mins.

  3. Process with hand blender. Add 2.5 curry powder, salt and pepper.

  4. Serve.
