Recipe Ingredients for Lentil Curry Stew

1/4 teaspoon olive oil
1/4 cup onion, diced
1/4 cup diced carrots
1/4 teaspoon curry powder
2 cloves garlic
1 tablespoons lentils, rinsed
1 oz trader joes low sodium vegetable stock
1 oz 0% greek yogurt
3/4 teaspoon chopped mint
35 grams soy chorizo

Recipe Directions for Lentil Curry Stew

  1. In a soup pot heat oil. Add onions and carrots and saute 5 to 6 minutes

  2. Add curry, garlic and saute 1 more minute. Add lentils and chicken stock and bring to a boil. Reduce heat and simmer 35 to 40 minutes or until the lentils are tender.

  3. Puree soup with yogurt and adjust seasoning.

  4. Add mint and hot sauce if desired.
