Recipe Ingredients for Lentil Chili (Big Girl Small Kitchen)

2 tablespoons olive oil
1 onion
4 cloves garlic, diced
2 I removed the seeds from one but left the others in [11979] pepp jalepenos
1 small carrot, diced
4 oz white mushrooms, cut in half and then sliced
4 teaspoons chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt
3/4 cup brown lentils
1/2 cup black lentils
14 oz diced tomatoes
1/4 cup quinoa
1/2 cup bulgur wheat

Recipe Directions for Lentil Chili (Big Girl Small Kitchen)

  1. Saute the onions in the olive oil for a minute or two over medium heat. Add the garlic, jalepenos, carrot, and mushrooms, and cook until all the vegetables are soft. Add the spices and the salt, stirring to toast for about a minute. Throw in both kinds of lentils, then pour in water (or vegetable broth) to cover, about 2-3 cups. Bring to a boil.

  2. Lower the heat and let the chili simmer for 20 minutes. Pour in the tomatoes, the quinoa, and another cup or so of water if necessary bring to a boil, then cover and simmer again for 10-15 minutes. At this point, the lentils should be more or less soft.

  3. Add the bulgur and a little more water if the chili seems dry, cover once more, and cook for about 10 more minutes. Let the chili rest for a few minutes on the stove, then taste it for salt and spice.

  4. avocado, cheddar, and/or sour cream for serving
