Economical Tip: for the quart of mixed veggies, I chop a mixture of whatever's in season and freeze mixtures in quart bags for later use. Most times it's red peppers, spinach, broccoli, squash, brussel sprouts, radishes, and whatever else strikes my fancy. For the chicken, I buy whole cut up chickens, and I use the neck, the back bone and the wings.

Recipe Ingredients for Lentil chicken stew

1 pound dry lentils
1 quart mixed vegetables
8 cups low sodium chicken broth
1 medium onion
1 cup chicken
1 pepper to taste
6 cloves garlic, chopped
1 tbsp sweet basil
1 tbsp paprika
1 packet onion soup mix

Recipe Directions for Lentil chicken stew

In a large stock pot, put all the ingredients in the pan and heat over medium high to high heat until boiling. Reduce heat to simmer for 45 minutes, covered. Stir and check consistency of the lentils. (If you're using chicken scraps, it's at this point I remove the chicken bones, leaving behind all the meat I can). If they are too firm, continue simmering, too dry, add water, etc. I like mine fairly thick and softer, like slit pea soup. Serve when ready.
