Healthy and flavourful lentil and chicken soup

Recipe Ingredients for Lentil and chicken soup

6 oz Boneless, Skinless Chicken Breast, frozen
3 clove Garlic
1 serving epicure chicken boullion base
2 tsp Becel Regular Margarine
1 cup, chopped Peppers, Sweet, Green
1.5 cup slices Carrots
2 stalk, large (11"-12" long) Celery
0.75 cup Corn, Sweet, Yellow
3/4 cup Organics Green Lentils Dry
2 tbsp Green Curry Paste
10 cup (8 fl oz) Water
2 tsp Extra Virgin Olive Oil from Tuscany

Recipe Directions for Lentil and chicken soup

  1. Bake chicken breast at 400 F until cooked. Chop garlic very fine. Chop carrots, celery, green pepper and chicken into bite size pieces.

  2. In a large soup stock pot, saute garlic in 2 tsp of margarine on med heat for 4-5 minutes. Do not overcook. Add carrots, celery, green pepper and olive oil and saute for 4-5 minutes. Add approx. 10 cups of water and bring to a boil. Add Epicure chicken boullion base and lentils. Simmer approx. 20 minutes (until lentils start to become tender). Add 2 Tbsp of green curry paste, corn and chicke, Simmer until it reaches desired flavour.
