Makes 10 servings



1 serv is 1.5 cups (350 gr). Add cumin, curry, garlic powder, whatever. These measures are 1/2 a small yam, 1/2 a pepper, chick peas are drained (so net of 540 ml can), and 10 oz is 1 can of artichoke hearts. 550 gr mushrooms is about 17 mushrooms.

Recipe Ingredients for Lentil Casserole, Carols

2 cups lentils, dry
4 cups water
796 ml canned tomatoes, diced
100 grams cabbage, chopped
110 grams yam
100 grams red bell pepper, chopped
230 grams ham, chopped to fine dice
1 large onion, chopped
500 ml chick peas, cooked
10 oz artichoke hearts
550 grams mushrooms
1 tsp salt

Recipe Directions for Lentil Casserole, Carols

  1. Cook lentils in the water with the tomato juice and cabbage. Don't let them cook too long. When about 1/2 done, add:

  2. - the onions which have been sauteed

  3. - all the other ingredients, and all the seasonings.

  4. - saute the mushrooms and add them, and the tomatoes, and the red pepper, near the end so they don't get overly cooked into the mixture.

  5. Cook until lentils are done.
