Awesome burrito filling using lentils, brown rice, black beans and corn. Serving size is 3/4 cup (or 194 grams - CC recipe has a higher gram count). Put in burrito tortilla and add condiments as desired - cheese, salsa, sour cream, guacamole, etc. Could easily make this recipe into enchiladas.

Recipe Ingredients for Lentil Burrito Filling - Slow Cooker

1 cup lentils
1/2 cup brown rice
15 ounce diced tomatoes
3 1/2 cups vegetable broth
1 1/2 tbsp mccormick's taco seasoning
1 1/2 cup black beans, drained and rinsed
1/2 cup frozen corn

Recipe Directions for Lentil Burrito Filling - Slow Cooker

  1. Place lentils, brown rice, tomatoes, broth, and taco seasoning in crock pot.

  2. Cook on low until rice is tender. Approximately 6-7 hours.

  3. Add black beans and frozen corn the last 1/2 hour of cooking.

  4. Add to tortillas and serve.
