Recipe Ingredients for Lentil Burgers

1 cup French Green lentils
2 tbsp garlic, minced
4 eggs
1 1/2 cups onion, chopped
8 slices whole-wheat bread, crumbed and toasted
1/2 tsp salt
4 tbsp olive oil

Recipe Directions for Lentil Burgers

  1. Cook Lentils in 3 cups water until soft. Drain and let cool.

  2. Add lentils, garlic, eggs and salt to a food processor and puree until mixture is hummus-like.

  3. Stir in onions and bread crumbs.

  4. Form mixture into 8 patties.

  5. Fry each patty over medium-high heat in 1/2 tbsp of oil.
