Good replacement for burgers high in fiber low in fat, good source of protien.

Recipe Ingredients for lentil burgers and pico de gallo

3 c cooked lentils
2 c saltines, crushed
2 eggs
1 onion, chopped divided
1/4 c oil
3 roma tomatos
1 bell pepper, chopped
1/2 c cilantro
1 tablespoon lemon juice
1/2 teaspoon salt

Recipe Directions for lentil burgers and pico de gallo

  1. Mash the cooked lentils with a potato masher. Add eggs, half of onion, and crushed saltines. Form into patties and fry in light oil.

  2. Chop tomatos, mix with onion, pepper, cilantro, lemon juice and salt. Let stand for an hour. Top patties with pico de gallo and enjoy!
