Recipe Ingredients for Lentil Brown Rice Casserole

3/4 cup dry lentils
1/2 cup brown rice
1 c. water
2 1/2 cups low sodium chicken broth
1 cup tomato sauce
3/4 cup chopped onion
1 cup chopped red pepper
1 grated carrot
2 c. chicken breast (cooked, shredded)
3 teaspoons Italian seasoning
2 cloves garlic (crushed)
1/2 tsp salt
1 dash pepper
1 cup grated mozzarella cheese

Recipe Directions for Lentil Brown Rice Casserole

Combine lentils, brown rice and water in crockpot and let sit overnight. Add the rest of ingredients (except cheese). Cook on slow in crockpot for 8 hours or high for 4 hours. Add the cheese about 30 minutes before end of cooking.
