A protein packed vegetarian main dish flavoured with herbs. Increase the amount of shredded swiss cheese if you like.

Recipe Ingredients for Lentil and Brown Rice Casserole

500 ml stock, vegetable
125 ml lentils
125 ml rice, brown
3 tomatoes
1 onion, medium
1 clove garlic
1 ml thyme
1 leaf, bay - small
1 ml salt
1 pinch pepper
1 ml basil, dried
125 ml swiss cheese, shredded

Recipe Directions for Lentil and Brown Rice Casserole

  1. In a 6-cup (1.5L) casserole, combine stock lentils, rice, tomaties, onion, garlic, thyme, bay leaf, salt, pepper and basil. mix lightly but throughly.

  2. Cover tightly with lid or foil. Bake in 350D oven for 1-1/2 hours or until the lentils are tender and liquid is absorbed, stirring 2 or 3 times during baking.

  3. Remove lid. Remove bay leaf. Top with shredded cheese. Return to oven for 5 minutes or until cheese melts.

  4. *optional* You can replace 1/2 cup of the stock with dry red or white wine.

  5. Makes 6 - 8 servings
