My interpretation of a spicy sweet-sour baked dish, brought to South Africa by Malay slaves. Cheap to make and very comforting. Adapted from a recipe found on Caloriecount.com.

Recipe Ingredients for Lentil Bobotie

1 1/5 cups lentils
2 1/4 cups water
3/4 medium onion
1 apple
2 slices whole wheat bread
1 cup unsweetened soymilk
2 tsp curry powder
3/4 tsp turmeric
1 tsp coriander
1 tsp cumin
7 tsp vinegar
1 tsp lime juice
2 tablespoons cherry preserves
2 tablespoons raisins
2 medium eggs
1/4 tsp salt

Recipe Directions for Lentil Bobotie

  1. Boil lentils in water until soft, then rinse and drain.

  2. While lentils are cooking, soak bread in 1/2 cup milk.

  3. mash bread with a fork and add to lentils.

  4. fry onions and apple in non-stick pan.

  5. add spices, vinegar and cherry preserves.

  6. pour onion mixture into lentil mixture.

  7. add 1 egg and raisins.

  8. spoon into a baking dish.

  9. mix together remaining 1/2 cup of milk and remaining egg.

  10. pour this mixture on top of the lentil mixture and bake at 350 degrees F for 30 to 50 minutes.
