Lentil Beef Soup Recipe

Wonderful hearty soup. I like to add celery and/or mushrooms sometimes. Great with a dollop of sour cream!

Recipe Ingredients for lentil beef soup

2 tbls olive oil
16 oz boneless beef roast
1 tsp salt
1/2 tsp pepper
1 1/3 cups carrots chopped
1 med onion diced
1 tsp rosemary
1 tsp oregano
1 tblsp beef bouillon
5 cups water
15 ounces tomato sauce
1 cup salsa
5 cloves garlic
11 oz green lentils
1/3 cup parsley

Recipe Directions for lentil beef soup

  1. Cut beef in to 1/2 inch pieces and de-fat.

  2. In small pan add water and beef bouillon to make broth or use canned broth.

  3. Heat oil in large pot over med heat. Sprinkle beef w/ salt and pepper and cook until brown. Approx 8 min.

  4. De-glaze pan w/ small amount of broth. Add onions and garlic. Saute for 3 min.

  5. add carrots rosemary and Oregano. Saute for 3 more min. Add tomato sauce and broth, bring to a boil then simmer for about an hour or until meat is tender.

  6. Add lentils and simmer for 45 min. Add parley just before serving.
