Lentil soup with sweet potato. Low GI and very filling.

Recipe Ingredients for Lentil and bean soup

650 grams tinned cannelini beans
650 grams tinned kidney beans
250 grams dried chickpeas
1 1/10 kg dried red lentils
1 kg sweet potato
300 grams carrots
200 grams celery
2 medium onions
10 litres water
5 tsp salt

Recipe Directions for Lentil and bean soup

  1. Soak chickpeas in water overnight.

  2. Drain chickpeas.

  3. Add chickpeas and lentils to large pot of boiling water (10 litres) and simmer slowly for 35 minutes.

  4. Add chopped onion, carrot, sweet potato, celery and salt and simmer 20 minutes.

  5. Add tinned beans and simmer 10 minutes or until all ingredients are soft.

  6. Freeze in portions for future use.
