Recipe Ingredients for Lentil & Barley Stew

1 cup Hulled Barley Organic
1 tbsp Extra Virgin Olive Oil
0.5 cup Lentils, Mature Seeds
2 cup, chopped Onions
4 clove Garlic
1 tsp Rosemary, Dried
1 cup, pieces or slices Mushrooms
1 medium Yellow Hothouse Bell Pepper
8 oz Wine
1.5 cup Beans, White, Mature Seeds, Canned
28 oz Tomatoes Diced
2 cup Spinach
4 cup Chicken Stock
1 serving Crushed Red Pepper

Recipe Directions for Lentil & Barley Stew

  1. Bring the barley and lentils to a boil, and simmer until tender.

  2. Heat the olive oil in a large pot over medium heat, and cook the onion and garlic until tender.

  3. Mix in the mushrooms, bell pepper, wine, and rosemary. Cook for 5 minutes. Stir in the barley, beans, lentils, tomatoes, spinach, salt, red pepper, and chicken stock. Cook until spinach is wilted, about 10 minutes.
