Recipe Ingredients for Lentil Barley Soup (vegan)

5 cups water
1/2 cup lentils, rinsed
1/4 cup barley
1/4 cup quinoa
1/2 cup diced celery
5 cloves garlic, minced
1 onion, chopped
1 tablespoon onion powder
3 tablespoons tamari
1/2 tablespoon cumin powder
1/2 teaspoon cinnamon
1 tablespoon Italian seasonings
3 cups chopped kale

Recipe Directions for Lentil Barley Soup (vegan)

  1. In a large stock pot (or some other deep pot) bring the water to a boil.

  2. Add the lentils, barley, quinoa (or whatever grain you choose) and garlic, onions, and celery.

  3. Let these cook covered over low heat for 15-20 minutes.

  4. Add everything else and let it all simmer for 40 minutes to 1 hour.

  5. Add water if you like it more ?soupy.?
