3 tbsp olive oil
1 large onion, diced
2 cloves fresh garlic, chopped

2 stalks celery, diced
1 tsp oregano
1 tsp basil
1 tsp thyme
28 ounce diced tomatoes
10 ounce frozen spinach
1 cup dried lentils
1/4 cup pearl barley
8 cups chicken stock
1 tsp fine sea salt
1 tsp freshly ground black pepper

Recipe Directions for Lentil Barley Soup

  1. Heal oil in a large pot over medium heat. Add onion and garlic, and cook for 3-4 minutes.

  2. Add carrots, celery, oregano, basil, and thyme. Stir and cook for 3 minutes.

  3. Add tomatoes and frozen spinach. Stir - spinach will defrost and separate as soup cooks.
