Recipe Ingredients for Lentil Barley Soup

1 cup lentils, rinsed
2 stalks celery, chopped
1/2 cup pearled barley, or hulled barley
1/2 tsp oregano
6 cups water, or vegetable stock
1/2 tsp cumin, ground
1 onion, chopped
1/4 tsp black pepper
2 garlic cloves, crushed
1/4 tsp red pepper flakes
2 carrots, sliced
1/2 tsp salt
3 cups spinach, chopped

Recipe Directions for Lentil Barley Soup

Place all ingredient (except salt) into a large pot and bring to a simmer. Cover and cook, stirring occasionally, until the lentils and barley are tender - about 1 hour. Add spinach and salt to taste. Cook until spinach is wilted but still bright green.
