Adjust spices to taste. Generous 1.5+ cup serving (360 g cooked weight) You can use 8 c V-lite vegetable juice and reduce the water to 7 c. Do not add salt or salt containing seasonings until after the lentils cook, as this will toughen them.

Recipe Ingredients for Lentil Barley Soup

300 g celery
200 g carrots
250 g onions
130 g barley
450 g lentils
300 g chopped spinach (frozen is OK)
9 c water
40 oz low sodium v8
28 g onion soup mix
1 tsp oregano
1 tsp garlic powder
1 tsp basil
1 tsp mint
1 tsp curry powder

Recipe Directions for Lentil Barley Soup

  1. Chop veggies into small pieces or use food processor.

  2. Put veggies, lentils, barley and water into a large pot.

  3. Simmer until lentils and barley are soft.

  4. Add tomatoes and onion soup mix and spices.

  5. Simmer another 15-20 minutes
