Recipe Ingredients for lentil barley soup

2/3 cup barley
3/4 cup lentils
5 cups chicken stock or vegetable stock (more if needed)
1 tbsp cumin (or to taste)
1 tbsp coriander (or to taste)
1 tbsp chili powder (or to taste)
1 medium onion diced
2 medium carrots chopped
1 1/2 tbsp olive oil

Recipe Directions for lentil barley soup

  1. chop vegetables

  2. saute onions in olive oil for about 5 minutes, add carrots and saute for another five minutes or until onions have become golden

  3. add stock

  4. add lentils and barley

  5. bring to simmer for 45 minutes to an hour, add spices

  6. useing a stock blender puree soup to desired consistancy

  7. enjoy your soup
