Lentil Barley Burgers Recipe

Makes 8 servings



Combine 1 1/2 cups water with the lentils in a saucepan; bring to a boil: cover reduce to a simmer and cook for 25 minutes or until tender. Cook barley per package instructions.

Recipe Ingredients for Lentil Barley Burgers

1 1/2 cups water
1/2 cup lentils
1 cooking spray
1 cup onion chopped
1/4 cup carrot
2 tsp garlic minced
2 tbsp tomato paste
1 1/2 tsp cumin
3/4 tsp oregano
1/2 tsp chili powder
3/4 tsp salt, divided
3/4 cup barley
1/2 cup bread crumbs
1/4 cup parsley
1/2 tsp black pepper
2 egg whites
1 egg large
3 tbsp canola oil

Recipe Directions for Lentil Barley Burgers

  1. Place 1/2 the lentils in a food processo; process until smooth.

  2. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add onion and carrot and cook for 5 minutes until tender, stirring occasionally. Add garlic and cook 1 more minute; stirring constantly. Add tomato paste, cumin, oregano, chili powder, 1/4 tsp salt; cook 1 minute, stirring constantly. Add onion mixture to lentils. Add remaining 1/2 tsp salt, barley, and next 5 ingedients (through eggs); stir well. Cover and refridgerate for 1 hour. Divide mixture into 8 patties and cook 4 patties; 3 minutes on each side in 1 1/2 tbsp oil.. Cook remaining 4 patties in 1 1/2 tbsp oil. Serve with fruit salsa or tomato salsa. Calorie count is for 1 patty only.
