Quick and easy salad full of iron

Recipe Ingredients for Lenti and Spinach Salad

420 g lentils
3 medium tomatoes, chopped
4 cups spinach, chopped
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
1/2 cup lemon juice
2 tbsp olive oil, extra virgin
1 tsp cumin

Recipe Directions for Lenti and Spinach Salad

  1. Drain can of lentils and rinse

  2. Chop tomatoes and spinach and add to lentils in a bowl

  3. Toast seeds under a grill or in a hot oil-free pan

  4. Mix the other ingredients together in a separate bowl for the dressing

  5. Add everything together and toss
