Cornbread - family recipe slightly modified

Recipe Ingredients for Lenda's Cornbread

1/2 cup cornmeal
2/3 cup flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon sugar
1 cup buttermilk
1/4 cup skim milk
1/4 cup canola oil

Recipe Directions for Lenda's Cornbread

Heat oven to 425 degrees F. Pour oil into small cast iron skillet and place in oven to heat while mixing bread. Mix dry ingredients together. Add buttermilk and skim milk. Should be the consistency of a thick pancake batter. (If batter is still to thick, add water till it is the consistency desired.) Pour all but 2 tablespoons of hot oil into batter and mix well. Pour batter into skillet and cook in oven till golden brown.
