A re-imagined chicken enchilada dish that has long been a family favorite. It's infinitely customizable! I've made versions with shrimp, beef, and even an entirely vegan take.

Recipe Ingredients for Lena's Mexican Lasagna

64 oz Fresh Boneless Skinless Chicken Thigh Cutlets
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Squash, Summer, Zucchini, Includes Skin
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.5 medium (2-1/2" dia) Onions
1 cup Black Beans
1 can (12 oz) yields Corn, Sweet, Yellow
1 tbsp Olive Oil
4 tortilla Multi Grain Tortillas
14 oz Old El Paso Sauce Enchilada Mild
14 oz Shredded Cheese
2 tsp Ground Chipotle Chile
0.5 tbsp Oregano, Ground
1 tsp Cumin
1 tbsp Garlic Powder
2 tsp Onion Powder
0.13 tsp Cinnamon, Ground

Recipe Directions for Lena's Mexican Lasagna

  1. Heat oil in a med pan.

  2. Brown chicken thighs

  3. Add onion and saute till just starting to brown

  4. Add bell peppers, corn, & black beans. stir together and let cook 3-5min.

  5. Poor 1/3 of enchilada sauce over chicken & veggies. Stir together. Cover and let simmer 10 min.

  6. In a deep baking dish add 1/2 of filling. Sprinkle well with cheese and top with tortillas.

  7. Drizzle 1/3 of sauce over tortillas & sprinkle again with cheese.

  8. Repeat for another layer. Top last with cheese and final bit of sauce.

  9. Bake at 375 for 15-20min or until top layer of tortillas are brown and crispy & the cheese has melted.
