Recipe Ingredients for Lemony shrimp salad with couscous

1 cup Couscous
1 1/2 pounds shrimp, cooked
1/2 pound snap peas
1 pint cherry tomatoes
3/4 cup basil leaves
2 scallions
2 tablespoons olive oil
2 teaspoons grated lemon peel
3 tablespoons lemon juice

Recipe Directions for Lemony shrimp salad with couscous

  1. place couscous in a large bowl. Add 1 cup very hot water and 1/4 tsp. kosher salt and pepper. Cover and let set for 5 minutes.

  2. Meanwhile, in a medium bowl, combine shrimp, snap peas, tomatoes, basil, scallions, oil, lemon zest, and juice, 3/4 tsp. of kosher salt, 1/4 tsp. of pepper, toss to combine. Serve over couscous.
