This is especially quick if using cooked frozen shrimp. Clam juice is salty so I don't add any additional salt, individual portions can be seasoned according to the diner's tastes. This is great with a Greek salad and some warm olive bread!

Recipe Ingredients for Lemony Shrimp Pasta

8 oz. whole wheat spaghetti
2 tsp. extra virgin olive oil
16 oz. shrimp, peeled
1/4 tsp. white pepper
2 tbsp. minced garlic
1/2 cup white wine
2 medium tomatoes, diced
6 oz. baby spinach
8 oz. mushrooms, sliced
1/4 cup clam juice
1 tsp. cornstarch
1 tbsp. lemon juice
6 lemon wedges
1/4 cup parmesan, grated
1/4 cup chopped Italian parsley

Recipe Directions for Lemony Shrimp Pasta

  1. Cook pasta to al dente and set aside.

  2. Cook shrimp in one teaspoon of olive oil if using raw shrimp. Otherwise, thaw and rinse frozen shrimp and set aside.

  3. Heat oil in pan and add garlic and mushrooms, cooking until fragrant. Add wine and cook until reduced by half.

  4. Stir in tomatoes and white pepper. Add spinach by the handful, stirring until wilted before adding the next batch.

  5. Whisk clam juice and cornstarch in small bowl then add to pan.

  6. Add cooked shrimp and lemon juice, stir well.

  7. Add parsley, cheese and sauce to pasta and toss. Serve each serving garnished with a lemon wedge.

  8. *I would normally use a 10 oz. bag of spinach but I had pulled some out for a salad, and since I wanted an accurate nutrition count, I wrote the recipe with what I had on hand.
