A light & tasty quinoa side dish with a great crunch.

Recipe Ingredients for Lemony Quinoa

1 cup Quinoa
2 stalk, medium (7-1/2" - 8" long) Celery
0.25 medium raw Onion Red
0.25 cup Lemon Juice
0.25 cup Nuts Pine
1 cup Parsley
1/4 tsp Cayenne
0.5 tsp Cumin

Recipe Directions for Lemony Quinoa

  1. In a small saucepan, sauté pine nuts in medium skillet over medium heat. This should take about 5 minutes but be careful not to burn the pine nuts. Remove from heat and allow to cool.

  2. While heating pine nuts, place quinoa in 2 cups of water and boil. Reduce heat to low, and simmer covered for about 10 minutes or until all liquid is absorbed. Allow quinoa to cool slightly.

  3. Chop celery, red onion, and parsley, and place in small bowl. Slowly add quinoa and mix together with pine nuts and vegetables. Add 1/4 C lemon juice.

  4. I like my quinoa cold, so I chill this in the refrigerator for a couple hours before serving! Easy to make and great for a pre-made side dish to bring to pot lucks & the like.
