A light Lemon Quinoa salad that is easy to make a ahead. Tastes just a great the next day as it does when it is just prepared

Recipe Ingredients for Lemony Quinoa

2 cup Quinoa
4 cups Water
3 cup Lemon Juice
8 oz Celery
1 ounce Onions, Spring Or Scallions
6 oz Tomatoes, Red, Ripe
6 oz Peppers, Sweet, Red
3 oz Carrots
1 oz Parsley
3 tsp Pepper, Red Or Cayenne
3 tsp Cumin Seed
3 tbsp Sugars, Granulated
1 tbsp Olive Oil
3 cloves Garlic
1 tbsp Lemons
1 Salt, Table
2 cup Quinoa
4 cups Water
3 cup Lemon Juice
8 oz Celery
1 ounce Onions, Spring Or Scallions
6 oz Tomatoes, Red, Ripe
6 oz Peppers, Sweet, Red
3 oz Carrots
1 oz Parsley
3 tsp Pepper, Red Or Cayenne
3 tsp Cumin Seed
3 tbsp Sugars, Granulated
1 tbsp Olive Oil
3 cloves Garlic
1 tbsp Lemons
1 Salt, Table

Recipe Directions for Lemony Quinoa

  1. In Sauce Pan Combine Quinoa, Water and Salt. Bring to Boil, then reduce heat to medium and cook until Quinoa is Tender and water has been absorbed, about 10 minutes. Cool slightly then fluff with a fork.

  2. Transfer the Quinoa to a bowl and stir in Green Onion, Grape Tomatoes, Red Bell Pepper, Carrots and Parsley.

  3. Combine Lemon Juice, Olive Oil, Cayenne Pepper, Cumin, Sugar, Garlic and Lemon Zest in Bowl.

  4. Pour Lemon Juice Mixture over Quinoa, Stir and Serve.
