Recipe Ingredients for Lemony Quinoa

0.25 cup Nuts Pine
1 cup Quinoa
1 dash Salt, Table
0.25 cup Lemon Juice
2 stalk, medium (7-1/2" - 8" long) Celery
0.25 cup, sliced Onions
2 grams Cayenne Pepper
0.5 tsp Cumin
1 cup Parsley

Recipe Directions for Lemony Quinoa

  1. Ingredients

  2. 1/4 cup pine nuts

  3. 1 cup quinoa

  4. 2 cups water

  5. sea salt to taste

  6. 1/4 cup fresh lemon juice

  7. 2 stalks celery, chopped

  8. 1/4 red onion, chopped

  9. 1/4 teaspoon cayenne pepper

  10. 1/2 teaspoon ground cumin

  11. 1 bunch fresh parsley, chopped

  12. Directions

  13. Toast the pine nuts briefly in a dry skillet over medium heat. This will take about 5 minutes, and stir constantly as they will burn easily. Set aside to cool.

  14. In a saucepan, combine the quinoa, water and salt. Bring to a boil, then reduce heat to medium and cook until quinoa is tender and water has been absorbed, about 10 minutes. Cool slightly, then fluff with a fork.

  15. Transfer the quinoa to a serving bowl and stir in the pine nuts, lemon juice, celery, onion, cayenne pepper, cumin and parsley. Adjust salt and pepper if needed before serving.
