Oven-baked chicken breast fillets, filled with parmesan cheese, mushrooms and mustard and baked in lemon juice.

Recipe Ingredients for Lemony Parmesan & Mustard Chicken

600 g skinless chicken breast
3 tbsp grated parmesan
2 tbsp mustard
115 g mushrooms
4/5 cup lemon juice
3 tbsp white wine
2 tbsp olive oil
1/2 tsp salt
1 tsp oregano

Recipe Directions for Lemony Parmesan & Mustard Chicken

  1. Cut chicken breasts open length-wise.

  2. Rub chicken inside-out with salt and oregano.

  3. Fill each breast with parmesan, then mushrroms and mustard on top.

  4. "Close" each breast using toothpicks.

  5. Place in deep baking pan and pour lemon juice over chicken.

  6. Add wine and olive oil.

  7. Bake in preheated oven at 180C for an hour, maybe a bit more.

  8. Slice and serve hot with mixed white and wild rice.
