Recipe Ingredients for Lemony Lemon Bars


CRUST:
1 1/2 cups all-purpose flour
2/3 cup confectioners' sugar
3/4 cup ICBINB! Light, soft

FILLING:
4 large eggs
1 1/2 cups white sugar
5 tablespoons all-purpose flour
2/3 cup lemon juice
1/3 cup confectioners' sugar for decoration

Recipe Directions for Lemony Lemon Bars

  1. Preheat the oven to 350 degrees F (190 degrees C). Grease a 9x13 inch baking pan.

  2. Combine the 1 & 1/2 cup flour, 2/3 cup confectioners' sugar, and butter. Pat dough firmly into baking pan.

  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 & 1/2 cups sugar and 5 tbsp flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

  4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.

  5. After bars have cooled, cut into uniform 2 inch squares and sprinkle with confectioners' sugar.
