Recipe Ingredients for Lemony dilled Beet Soup

16 oz can sliced beets, liquid reserved
10 3/4 oz beef broth, canned
1 1/4 cup water
2 tablespoons minced dill, or 1 1/2 teaspoon dried dill weed
2 tablespoons lemon juice
1 teaspoon lemon zest grated
1 tablespoon sugar
1 salt and pepper
4 teaspoons low fat sour cream

Recipe Directions for Lemony dilled Beet Soup

  1. place beets and half their liquid in a food processor. Puree until smoth. Transfer to a nonreactive medium saucepan.

  2. add beef broth, water, and 1 tablespoon minced fresh dill or 3/4 teaspoon dried. simmer 5 minutes

  3. add lemon juice, lemon zest, sugar, and remaining dill. Stir to disove sugar. Season w/ salt and pepper. Place in 4 bowls and garnish with sour cream. can be chilled before serving, or served hot.
